Simple Syrup: Mix equal parts sugar and water (e.g., 100g each), bring to simmer, cool before using

- Almond Filling:
- 70g unsalted butter, softened
- 90g almond meal
- 100g raw organic sugar
- 1 egg
- 1 teaspoon almond extract (or to taste)
- 40g sliced almonds
- 6-8 day-old croissants
- Simple syrup (1:1 sugar and water solution)
