Simple Apple and Almond Galette

A simple homemade apple galette with buttery pastry, a sweet almond filling, and golden baked apples. This rustic dessert is easy to make, beautifully fragrant, and perfect for autumn or any time of year.

Ingredients
  

Pastry:
  • 150 g flour
  • 100 g butter
  • 4-5 tbsp ice water
  • 2 tbsp brown sugar
Almond Filling:
  • 60 g unsalted butter, softened
  • 80 g almond meal
  • 90 g sugar
  • 1 egg
Apple Topping
  • 200 g sliced apples
  • 2 tbsp caster sugar (let soak with apples for 10 mins)

Method
 

For the Dough
  1. In a medium bowl, combine flour, brown sugar, and butter. Rub the butter into the flour with your fingertips until the mixture resembles fine crumbs.
  2. Add ice water, one tablespoon at a time, mixing gently until a dough forms.
  3. Shape into a disc, wrap, and refrigerate for 30 minutes.
For the Almond Filling
  1. In a small bowl, beat the butter and sugar until creamy.
  2. Add the egg and almond meal, mixing until smooth and well combined. Set aside.
Assemble & Bake
  1. Preheat the oven to 180°C (350°F). Roll out the chilled dough on baking paper into a rough circle.
  2. Spread the almond filling in the centre, leaving a 3–4cm border. Arrange the apples neatly on top.
  3. Fold the pastry edges gently over the apples, pleating as you go. Brush with milk or melted butter if desired.
  4. Bake for 35–40 minutes, or until golden brown and crisp.
  5. Allow to cool slightly before serving. Best enjoyed warm with cream or ice cream.
